In this section of the blog, we visit some of our fantastic wholesale customers who’ve been buying our bread, pastries and cakes, and doing wonderful things with them.

Tramezzini Espresso have been open 8 years, and they’ve kept with the same coffee and bread people for, you guessed it, 8 years. Allpress and Brasserie Bread – a brilliant combination if you ask us. It’s like the mob – once you’re in, you’re in. And that includes their customers as well. With very little street traffic, most of their regulars come from the AMP building and surrounding buildings, like Governer Macquarie Tower and even the Intercontinental Hotel. According to Con, the manager, Tramezzini do a lot of coffees for the hotel’s staff, who then go on to recommend Tramezzini to the hotel’s guests. So they get a good mix of suits and ties; khakis and sandals.

We visited Tramezzini at the wrong time. It was a manic Thursday, at 3pm in the heart of the CBD. Entering the AMP lobby where Tramezzini sits was a cool respite from the heat, but clearly we weren’t alone in our search for air conditioned café comfort. A patiently waiting crowd stood in front of the busy espresso bar, while staff,dressed in smart black uniforms were darting around behind the counter and around the tables in a sort-of organised chaos.

Later, we find out the till system had decided to crash about 1 minute before we arrived. Amazingly enough, nothing goes out of whack for Tramezzini. The pace is brisk and business-like, but still friendly. Everyone’s having their afternoon meeting here. While the crashing of the till can induce a hernia in many a café manager, Kon brings it under control by  delivering short concise instructions to his staff on how to manage it. No one panics, and the waiting crowd silently builds up at the espresso machine which is whirring like you wouldn’t believe, churning out coffees by the minute. Amazing speed and efficiency on display here.

Three things we like about Tramezzini

  1. Everything about it is smooth and slick – It just flows, you know? The staff, the service, the coffee, the ambience. Set in AMP’s elegant marble lobby with high ceilings, Tramezzini has an easy yet polished vibe about it.
  2. High quality and VIP treatment – Their barista is so particular about making the best cup possible, he’ll throw away substandard brews if he’s not happy with the result. Apart from running a busy café, Tramezzini also does the catering for all of AMP’s functions and meeting rooms in the building. Just that morning, Kon had already completed a breakfast BBQ for visiting 50 Japanese guests.
  3. They know what their customers want – Kon reads our Brasserie Bread newsletter to stay up-to-date with what’s going on with his bread people. He’s been ordering the Bakers Round sourdough, a Gold Medal winner for 8 years; he says traditional sourdough toast has always been the most popular thing on his breakfast menu, and his customers know quality when they taste it.
