Dr Morse Bar & Eatery is a welcome addition to Abbotsford. On a section of Johnston Street where bars and restaurants are few, Dr Morse brings an opportunity to Abbotsford where people can enjoy quality food and drinks away from the bustle of the nearby Collingwood streets.

The venue itself is to be esteemed, its structures dating back to the early 1900s. One of the considerable standout features of the design is the front of the café, where a large brick wall displays the painted words of ‘Dr Morse’s Indian Root Pills’.  The dated advertisement was considered the basis of inspiration for the space. A combination of old and recycled materials are the foundation for the design – a tribute to its history – decorated with modern furniture and neat lines.

The menu served at Dr Morse is just as notable at the bar itself. Head Chef Kane Mordini, along with sous chefs Kane Papworth and Tyler Preston, have designed a modern menu adapting to current food trends and showcasing seasonal produce. The lunch menu at Dr Morse is a casual, stripped back version of some of the dinner-time favourites. A range of sandwiches using Brasserie Bread are on offer, as well as salads, light dishes and plenty of vegan and vegetarian options. Chef Tyler says that one of the most popular dishes on the lunch menu is the classic beef burger. Served in a Brasserie bread brioche bun he says that the bun is definitely a key aspect to the dish.

Dr Morse’s chicken and bacon club sandwich is also a favourite. It’s a fusion of both hot and cold aspects; poached chicken and crispy bacon served warm on a base of Brasserie Bread white organic sourdough, topped with melted cheddar cheese, fresh tomato and lettuce beneath a slice of quinoa and soy sourdough.  A dollop of American mustard and mayonnaise finishes off the club sandwich.

A very creative dessert served at Dr Morse is the chocolate brioche pudding with salted caramel and crème fraiche ice-cream. The rich pudding is perfect with the salted caramel sauce. Combined with the tartness of the crème fraiche ice cream, this dessert is a treat every diner should allow for at the end of their meal.
